“Goma-Ae” (vegetables with sesame sauce) is a very popular Japanese dish to eat at home. It’s a kind of salad with the sauce of ground roasted sesame seeds, plus soy sauce and sugar.
It is sometimes called “Goma-Yogoshi”. “Goma” means “sesame” and “Yogoshi” means “getting something dirty”. The name may have come from the appearance of the vegetables with the ground sesame seeds sprinkled over them.
You can use either white or black sesame seeds, but it’s better to roast the sesame before grinding. The aroma of sesame is the critical feature of this salad.
You can use a variety of vegetables apart from beans, such as spinach, broccoli, etc.

beans
white sesame seeds: 2 Tbsp
soy sauce 1 Tbsp
sugar: ⅔ – 1 Tbsp
How to make Beans Goma-Ae (Goma-Yogoshi): Dirty Sesame Salad
Boil the beans and drain. Cut into bite-sized pieces.
Roast and grind white sesame seeds.
Mix the soy sauce, sugar and ground sesame seeds in a bowl to make a sauce.
Add the beans and mix to coat.
When roasting the sesame seeds, dry roast them without oil.
Always stir the sesame seeds, as they burn easily. This will ensure that the sesame seeds are evenly golden brown coloured.
