If you are growing courgette in your garden, it would be a shame not to eat the flowers! Courgette flowers should be eaten the day they are picked, as freshness is essential.
Now the courgette flowers are in full bloom in our vegetable garden, so I picked them and made fritters with them.
Preparing the courgette flowers
After the flowers are harvested, cut off the sepal.
Cut off the stamens (or pistil if it’s a female flower) with scissors and rinse them in a bowl of water.
The stems can be cut off or stripped and the preparation is complete.

- Courgette Flowers: 4
- Mozzarella Cheese: 2 slices
- Anchovies: 1

- All Purpose Flower
- Soda Water
How to make Courgette Flower Fritters
- Chop the cheese and anchovies.
- Fill the courgette flowers with the cheese and anchovies and twist the petals to close.
- Dip the courgette flowers in the mixed batter of flour and soda water, then deep-fry until crispy.
