We love stir-fried noodles. Yesterday, my boyfriend went to our favourite Asian supermarket in Montreal and bought fresh noodles and minced pork, amongst other things. So I made stir-fried noodles using them this morning for breakfast.
Stir-fried noodles are easy to make. You can add any kind of ingredients that you like. It’s possible to make them either with fresh noodles or dried noodles, or even spaghetti. Today, I would like to share a recipe using fresh noodles and ground pork.
Ingredients for 2 people:
- Fresh noodles: a half package of 454g (16oz)
- Minced Pork: 100g
- Garlic: 1 to 2 cloves
- Ginger: 1 little piece
- Spring Onions
- Sweet Red Pepper: 1 medium size (or any vegetable that you like)
- Soy Sauce: 1 tablespoon
- Hoisin Sauce or Oyster Sauce: 2 tablespoons
- Shaoxing Cooking Wine (if available)
- Salt
- Black Pepper
- Oil

There are different types of fresh noodles available in the Asian shop. I recommend that you use the noodles which have “Chow Mein ” on their packages, if you want to make stir-fried noodles. “Chow Mein” means “stir-fried noodles” in Chinese.
Some of the noodles are thinner and other packages are thicker. You can choose any of them as you like. This time we took thicker ones.
Preparation:
- Boil the noodles for a few minutes, stirring occasionally, until they are cooked (you can test them like pasta), and drain them
- Chop up the garlic and ginger
- Slice spring onions and sweet red peppers or any vegetable that you like
How to Make:
- Heat the wok and pour 1 tablespoon of oil
- Add chopped garlic and ginger in the wok
- Add the minced pork, salt, black pepper and a tablespoon of Shaoxing cooking wine. Stir it occasionally and cook until the pork changes colour
- Add the sweet red pepper, spring onions or other vegetables that you like in the wok and stir them
- Add boiled noodles, Hoisin sauce (or oyster sauce), soy sauce and stir them
- Season with salt and black pepper if necessary, and you can serve them.
