Courgette and Corn Salad with Tuna Salad

We are growing a lot of courgette plants this year, 3 of which are planted in the ground and the rest are in planters. It is obvious that the plants grow much better in the ground than in the planters.

For example, we can harvest two or three courgettes from one plant in the ground while we can only harvest one fruit at a time in a planter. We didn’t expect to see such a difference. I found it’s kind of a waste of time to grow courgette in a planter. We’ll only plant them directly to the ground next year.

Anyway, it’s a real pleasure to have freshly harvested courgettes in the garden. They’re delicious when sliced and grilled, but we’ve also enjoyed them freshly picked in a salad.

This time, I added corn, which is in season at the moment too, to make a simple tuna salad.

Ingredients of Courgette and Corn Salad with Tuna

  • courgette: 1

  • corn: 1 corn on the cob

  • canned tuna: 1

  • salt: a pinch

  • black pepper: a pinch

Preparation of Courgette and Corn Salad with Tuna

  1. Boil or steam the corn and take the corn off the cob.

  2. Cut the courgette in half and then into thin slices, season with salt.

  3. Drain the water (or oil) from the canned tuna.

  4. Squeeze the water out of the courgette and add all the other ingredients.

Today, I simply seasoned with salt and pepper. You can also add mayonnaise, olive oil and lemon juice, or pounded anchovy paste.

Use the freshest courgette you can find. Salting the courgette can soften it and remove the sourness to give a smooth texture. You can also add other vegetables like tomatoes!
